
Grapefruit and thyme are a match made in heaven. Thyme has a slight lemon flavor which pairs so well with the tart grapefruit. This is my favorite cocktail to make for brunch. I saw this recipe on an episode of “Giada at Home” (one of my favorite shows ever) and have been making it for years. I’m obsessed with all herb-infused drinks (check out my Lemon Lavender Cocktail here) because they provide more depth of flavors. For this recipe, I typically make the simple syrup and juice the night before and store in a pitcher in the fridge. Then I just add the chilled prosecco the next morning, right before brunch.
Serves 4
Ingredients:
- 2 grapefruits
- 1 bottle of prosecco
- 1/2 cup sugar
- 1/2 cup water
- 15 to 20 sprigs of thyme
Directions:
To make the simple syrup, add sugar and water to a small saucepan over medium heat. Stir until sugar is dissolved. Once the mixture is fully clear, remove from heat and add in all but 4 thyme sprigs. Allow the syrup to cool.
Meanwhile, juice 2 grapfruits (should yield about 1 cup of juice). Add juice to a pitcher, then add in the cooled simple syrup, followed by the prosecco and stir. Pour into 4 champagne glasses and garnish each with a sprig of thyme.
