White Chocolate Berry Trifle

I’m a huge sweet tooth and never met a dessert I didn’t like. My Husband on the other hand, is not a big sweets person. However, he LOVES this dessert and will even request for me to make it. It is fresh and delicious and is the perfect addition to your brunch menu. You can serve it in a large trifle dish, but I love how elegant these martini glasses look.

Serves 4

Ingredients:

  • 1 (5 oz) box shortbread cookies
  • 1 cup white chocolate chips
  • 1 (3.4 oz) package Vanilla instant pudding mix
  • 2 cups cold milk
  • 2 cups Cool Whip, thawed
  • 3 cups seasonal berries (I use strawberries, blackberries, raspberries and blueberries)
  • Fresh mint for garnish

Directions:

Melt the white chocolate chips in a microwave safe bowl. Place in the microwave for 30 seconds, then stir. Continue warming at 15 second intervals, stirring in between each, until the chocolate is fully melted. Once melted, set aside and allow to cool slightly.

Meanwhile, in a large mixing bowl, whisk together the package of pudding mix with cold milk. Mix for 2 to 3 minutes until thickened. Add in melted chocolate and whisk again. Then, add 1/2 cup of the Cool Whip and mix until smooth.

Next, assemble the trifles. Use your hands to break up two shortbread cookies in the bottom of each martini glass. Cover the cookies with the white chocolate pudding followed by a handful of berries. Then top with a generous dollop of whipped cream and garnish with fresh mint.
