It’s not Thanksgiving without mashed potatoes an

It’s not Thanksgiving without mashed potatoes and these Roasted Garlic Mashed Potatoes are my go-to!

Ingredients:
5 heads of garlic
Olive oil
Salt and pepper
5 lbs russet or Yukon gold potatoes
8 oz cream cheese, softened
1/2 cup of butter, softened
1/2 cup sour cream
1/4 cup heavy cream
1/2 cup chicken broth
1/4 cup chopped chives
1 tsp Lawry’s Seasoned Salt

Directions:
To make the roasted garlic, slice to tops off of the garlic heads. Place the heads in a foil lined baking dish, drizzle with olive oil and sprinkle with salt and pepper. Cover the pan with another piece of foil. Place in the oven and roast for 1 hour at 400 degrees.

Remove from oven and let them sit until they are cool enough to handle. Pop each roasted garlic clove out from the head into a small bowl and set aside. You can do this step the day before you plan to make the potatoes to save time.

Preheat oven to 350 degrees. If you’re using russet potatoes, wash and peel them. You can also peel the Yukon gold potatoes but I actually leave the skin on. Dice the potatoes into 1 inch pieces. Place the potatoes in a large pot and cover them with water. Bring the pot to a boil. Cook for about 15 to 20 minutes until the potatoes are fork tender. Drain the potatoes and put them back into the pot.

Use a potato masher to mash the potatoes. Then add in the cream cheese, butter, sour cream, heavy cream, and salt and mash together. If you want to thin out the potatoes a bit, you can add up to 1/2 cup of chicken broth. Then add in the chives and roasted garlic. Mash until combined. Then add to a buttered 9 x 11 inch baking dish. Place in the oven and cook for about 20 minutes until heated through.

You’ve been warned! This can been made a few days in advance. A jar of this also makes the best hostess gift! Here is the recipe!

Ingredients:
1 lb fresh cranberries
1/3 cup water
2 cups sugar
1 cinnamon stick
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 orange, zested and juiced

Directions:
Add the cranberries, sugar and water to a medium sized pot and place over medium heat. Stir together until the sugar is incorporated. Bring this mixture to a boil. Once boiling, add in the cinnamon stick, allspice and nutmeg then mix together. Lower the heat and simmer for about 8 to 10 minutes, stirring occasionally. Some of the cranberries with burst during this time which is exactly what we want. Finally, remove from heat and add in the orange zest and juice. Stir, then allow for cranberry sauce to thicken and cool. Then refrigerate until ready to use.

If you’re hosting Thanksgiving this year, one thing you can do days in advance is make your centerpieces and set the table! Here is your reminder that @traderjoes has some of the best fall flowers right now 🌻

✨Friendsgiving✨ One of our favorite nights with our favorite people! After 7 years of hosting, I almost have it down to a science. My tips are:
1. Prep as much food as possible ahead of time! I make a lot of side dishes the day before so I can just pop them in the oven the day of. Even things you can’t cook until the day of still chop etc ahead of time.
2. Use plastic tableware! All of these beautiful plates and cutlery are disposable which makes cleanup 1000x easier.
3. Rent glassware! That way all the glasses match and you just have to rinse them out before returning them.
4. Accept help! We do a potluck style so everyone brings a dish, which when you have 35 guests is a HUGE help!
5. Create a detailed schedule for the day of your event so you can stay on track and have everything done and ready by the time your guests arrive. (This doesn’t always happen… I was making gravy in the kitchen while our guests were getting their first round of drinks in our bar- BUT it helped me stay focused and set realistic time frames on everything I needed to do.)
