Mixed Berry and Chicken Salad

Light, colorful and delicious — this is the perfect summer salad. I really enjoy cooking seasonally. Even though we can get pretty much any fruit all year long here in Southern California, fruits just taste better when they’re in season. My husband and I love going to our local Farmer’s Market on Sunday mornings. Especially during summer, the produce is extra tasty. It’s also the time that berries are in season. A salad is a great way to utilize those fresh berries. This is my version the Nordstrom Cafe’s Mixed Berry and Chicken Salad.

Serves 4

Ingredients:

Salad:

  • 10 cups mixed greens
  • 2 large roasted chicken breasts, sliced
  • 1 ½ cups raspberries
  • 1 ½ cups blackberries
  • 2 cups strawberries, sliced
  • ½ cup blue cheese crumbles
  • ½ cup candied walnuts
  • Blackberry Dressing

Blackberry Dressing:

  • 1 cup store-bought champagne vinaigrette
  • 7 blackberries
  • 2 tbsp candied walnuts

Directions:

To make the dressing, add the champagne vinaigrette, blackberries and walnuts to a blender and blend until smooth.

Place mixed greens in a large serving bowl. Begin adding dressing to the mixed greens, a few tablespoons at a time to avoid overdressing. Toss the lettuce with the dressing. Then add in berries, cheese, walnuts and chicken and toss lightly (to prevent mashing the berries). Serve and enjoy!
