Peach Puff Pastry Pizza

I like to take advantage of peaches when they’re in season and use them in as many dishes as possible. This is a great summer appetizer but tastes almost like dessert (probably why I like it so much). It’s beautiful and so easy to make. Plus, I usually have these ingredients on hand. I love the combination of the sweet caramelized onions and peaches with the salty feta cheese and the buttery puff pastry. If you’ve never cooked with puff pastry dough, you should start. You can make it at home but I actually prefer store-bought. You can find it in the freezer section of your grocery store. It’s rich, flaky and delicious.

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 3 tbsp of apricot preserves
  • 2 – 3 peaches, thinly sliced
  • Caramelized onions
  • 2 tbsp feta cheese

Directions:

Preheat oven to 400 degrees. Place the puff pastry dough on a sheet pan and pierce it thoroughly with a fork so that it doesn’t puff up too much. Place in the oven and cook for about 10 minutes until golden brown. Remove from oven and allow to cool slightly.

Spread the apricot preserves over the puff pastry. Then place sliced peaches over the preserves and top with the caramelized onions and feta cheese. Place back in the oven for 5 to 7 minutes. Remove from oven and allow to cool slightly before cutting. Enjoy!

Caramelized Onions

Ingredients:

  • 1 red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp sugar
  • Salt and pepper

Directions:

Place a skillet over low heat. Drizzle pan with olive oil and add in onions. Sprinkle with sugar and a pinch of salt and pepper. Cook on low until onions are browned and slightly crispy, about 25 to 35 minutes.
