Oatmeal Coconut Cookies
I love ALL cookies, but if I had to pick favorites, these would be in my top 3! I make these Oatmeal Coconut Cookies more than any other kind of cookie. Theyโre so easy and are a big crowd pleaser. I get asked for this recipe ALL the time. This is not your typical oatmeal cookie. These cookies donโt have raisins in them (I like raisins but not in my cookies). Instead, they have coconut which adds the best flavor and helps make them nice and chewy.
Ingredients:
- 2 sticks of butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 1/2 cups flour
- 1 cup shredded, sweetened coconut
- 1 cup quick oats
Directions:
Preheat oven to 350 degrees.
In the bowl of a stand mixer, cream together butter and white and brown sugar until light and fluffy. Then add in the eggs, one at a time followed by the vanilla. Next, add in the baking soda, baking powder, salt and flour and mix together until fully incorporated. Lastly, add in the coconut and quick oats and mix again.
Using a cookie scoop, place the dough onto a lined baking sheet. Place in the oven for 9 to 11 minutes or until the edges just start to turn golden. Remove from oven and allow to cool.
