My Nonna always said that the best recipes are the simplest recipes. As per usual, she was right! All of her recipes are the most delicious authentic Italian dishes, yet so easy to make and only call for a few ingredients. Just like Nonna’s Red Sauce, this Genovese Sauce was one of her most famous recipes. It is basically just an onion sauce with chicken and diced tomatoes. The prep is super quick and easy and then the sauce goes into the oven for hours, where it develops the most delicious flavor. This sauce has quickly become one of Asher’s favorite meals as well.
Ingredients:
- 1/4 cup olive oil
- 2 lbs chicken thighs
- 6 onions, roughly chopped
- 3 cloves of garlic, minced
- 2 (28 oz) cans diced tomatoes
- 1 tbsp Chicken bouillon
- 1 cup parmesan cheese
- salt
Directions:
Preheat oven to 325 degrees.
Place a large dutch oven (I use this Le Creuset pot which is on major sale right now) over medium heat. Pour olive oil into the hot pan. Sprinkle the chicken thighs with salt and then add them to the oil. Cook them for a few minutes on each side. Add the chopped onions and garlic and stir. Then pour in the diced tomatoes and chicken bouillon and stir.
Put the lid on the pot and place it in the oven. Cook for 5 1/2 hours. Remove from the oven and allow to cool slightly. The chicken will be falling apart already but you can use a couple forks shred the chicken more if you’d like. Then add the cheese and mix. Serve with your favorite pasta.
