White Chocolate Lemon Poppy Seed Scones

I love everything about brunch! I’m constantly experimenting in the kitchen and trying to create fun and easy brunch recipes. I’m not a huge scone person, but I am obsessed with these. They are so moist and delicious with a great combo of flavors (lemon and white chocolate go so well together). These scones are basically dessert for brunch and I’m super into that.  Summer is the perfect time to host a brunch. When hosting, I like to do as much as I can ahead of time so that I can just relax with my guests, have a mimosa and enjoy a nice leisurely morning. These scones are great because you can make them the day before and they are sure to wow your guests!

Ingredients:

Scones:

  • 2 cups flour
  • 1/3 cup sugar
  • 2 tbsp poppy seeds
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 stick of cold butter
  • ½ cup sour cream
  • 2 lemons, zested
  • 2 tbsp lemon juice
  • 1 egg
  • 2/3 cup white chocolate chips

Glaze:

  • 1 cup powdered sugar
  • 1 tbsp lemon juice
  • 1 tbsp milk

Directions:

Preheat oven to 400 degrees.

In a large mixing bowl, whisk flour, sugar, poppy seeds, baking soda, baking powder and salt together. Using a cheese grater, grate 1 stick of cold butter into the dry ingredients. Mix together until the mixture resembles a course meal. Then add in the white chocolate chips and set aside.

In a separate mixing bowl, add sour cream, lemon juice, lemon zest, 1 egg and mix together. Add wet ingredients into the dry ingredients. I found it’s best to use my hands to mix this (take your rings off first). Once all the dry ingredients are incorporate with the wet ingredient, form the dough into an 8 inch disk. Cut the dough into 8 slices and place onto a baking sheet and into the oven. Bake for about 8 to 10 minutes until the edges start to turn golden.

To make glaze, whisk together powdered sugar, lemon juice and milk. Spoon glaze on top of the cooled scones sprinkle with poppy seeds. Let glaze harden and enjoy!
