Watermelon is the quintessential summer food. We always have a container of cubed watermelon in the fridge. Cold watermelon on a hot summer day is perfection. Watermelon is delicious and refreshing on its own, but the flavors in this salad canโt be beat. This is a great dish to serve at a dinner party or bring to a BBQ. It is SO incredibly easy to make and looks quite impressive.
Serves 4 – 6
Ingredients:
- 1 medium watermelon
- ยผ cup feta cheese
- 1 tbsp chopped mint leaves
- Balsamic glaze
Directions:
Cut watermelon into thick triangular wedges. Arrange pieces on a pretty platter. Then sprinkle with feta cheese and chopped mint leaves. Top with a drizzle of balsamic glaze right before serving.

Love this recipe. I use arugula which has a nutty flavor with the feta [I use Bulgarian feta which has much taste] and blends well with the watermelon and glaze. The best recipe for summer!
