Snowball Cookies
My Mom has been making these cookies for as long as I can remember. They are very similar to “Mexican Wedding Cookies”, but we call them Snowball Cookies. My Husband is not a huge sweets person, but this is his absolute favorite cookie. They are so simple, easy to make and perfect for your holiday cookie platter.
Ingredients:
- 1 cup (2 sticks) butter, softened
- 2 cups flour
- 1 tsp vanilla
- ยฝ cup powdered sugar
- ยพ cup chopped walnuts
- 2 cups powdered sugar for coating
Directions:
Preheat oven to 375 degrees.
In the bowl of a stand mixer (or mixing bowl if using handheld mixer), add butter, flour, vanilla and powdered sugar and mix until fully incorporated. Then add in chopped walnuts and mix again.
Use a tablespoon sized cookie scooper, and scoop cookie dough balls onto a baking sheet. Bake for about 13 minutes. Remove cookies from oven and allow them to cool slightly.
Pour 2 cups of powdered sugar into a bowl. Once cookies are cool enough to handle, drop cookies one at a time in the powdered sugar to coat. I like to double coat the cookies. Once I finish coating them, I repeat this step and coat them once more.
