Roasted Asparagus
Roasted asparagus is my favorite side veggie. I probably make it more than any other veggie. I serve it as a side with steak, chicken, fish or pasta. Asparagus goes well with everything and it is so good for you. This is the easiest way to prepare asparagus and it’s honestly the best!
Serves 4 – 6
Ingredients:
- 2 bunches of asparagus
- Olive oil
- Salt and pepper
Directions:
Preheat oven to 375 degrees.
Cut the ends off the asparagus spears. Line a baking sheet with foil. Spread the asparagus in an even layer on the baking sheet. Drizzle asparagus with olive oil, then sprinkle with salt and pepper. Roll the asparagus around so that all the spears are coated in olive oil, salt and pepper.
Roast until asparagus is tender and slightly crispy, for about 25 to 35 minutes (depending on how thick the asparagus is). I like mine a little crispy so I cook them for a bit longer.
