Peanut Butter Banana Blender Muffins

These muffins are delicious, healthy and easy to make, which is why I’ve been making them for so many years. All you do is mix all the ingredients together in a blender and then pour them into your muffin tin. I made these all the time after having my son, because as a new Mom, sometimes it was hard to find time to sit down and eat (and still is actually haha). These are just easy to grab on the go and are yummy, filling and full of protein. Another reason I made them so often was because they contain oats which are great for breastmilk supply. These muffins are also great for kids! Asher LOVES them and they are healthy so I feel good about him eating them. I do however pick out the chocolate chunks because even though he has teeth, it would be too hard for him to chew them. But if your kids are old enough, then they will probably love the chocolate! I recently made a batch adding spinach in an attempt to sneak more greens into a delicious snack. They taste just as good and are green which is also fun for kids.

Ingredients:

  • 2 ripe bananas
  • 2 1/4 cup rolled oats
  • 1/2 cup peanut butter
  • 1/2 cup pure maple syrup
  • 1/4 cup almond milk
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Semi-Sweet Chocolate Chunks (or chocolate chips)
  • Optional: 2 cups packed spinach (for Green Muffins)

Directions:

Preheat oven to 375 degrees.

Place all ingredients, except for the chocolate chips, into a blender (I use this Vitamix) and blend until completely smooth. Then, reserve a small handful of the chocolate chunks to top the muffins with. Add the rest of the chocolate to the batter and stir. I like to use cupcake liners but you can just spray the muffin tin with nonstick spray if you’d prefer. Then using an ice cream scooper like this, fill the tin with batter. Top each muffin with the remaining chocolate and then place in the oven for about 20 minutes, until a toothpick inserted comes out clean.
