Peaches are sweetest and most delicious during summer! So, I take full advantage and use them in as many dishes as possible. Peaches are so versatile. Not only do I use them in salads, but they’re also amazing in appetizers, entrées AND desserts! I love to start off a dinner party with a peach tart (see my Peach Puff Pastry Pizza recipe here), then move onto a roasted chicken breast covered in some homemade spicy peach salsa, and finish the night with a grilled peach topped with a scoop of vanilla ice cream. This Peach and Burrata salad goes perfectly with any type of grilled meat or fish. It is SO incredibly easy to make and has been my go-to all summer long! I think I’ve made this salad at least 15 times over the last few months and it’s always a hit.
Serves 4 – 6 (as a side)
Ingredients:
- 5 peaches, thinly sliced
- 8 oz burrata
- 3 oz prosciutto
- Handful of basil leaves
- Balsamic glaze
Directions:
Cut the burrata into large pieces and set aside. Choose a platter that you would like to serve the salad on. Begin arranging the sliced peaches, burrata and prosciutto on the platter, any way that you’d like. Then top with basil leaves and a drizzle of balsamic glaze and serve.
