French Baguette Sandwiches

This recipe was inspired by a trip that my Husband and I took to France in June for our Anniversary. The trip was filled with so much AMAZING food, but I think some of our favorites were the sandwiches. We ate baguette sandwiches pretty much every day of our trip. Bread literally just tastes better in France! Even the sandwich we bought at the train station was incredible. The sandwiches we ate were so simple, but delicious and had only a few ingredients. The key is to use really good, high quality ingredients. For this recipe, try to use the best baguette that you can find. We buy our favorite breads at a French Bakery stand at our local Farmers Market. Great bread makes all the difference in a sandwich. These sandwiches are so easy to make and are guaranteed to be a hit at your next summer picnic!

Makes 8 sandwiches

Ingredients:

  • 2 French baguettes
  • ½ lb prosciutto
  • 1 heirloom tomato, thinly sliced
  • 16 oz Fresh Mozzarella cheese, sliced
  • ½ cup basil leaves
  • 1 cup mayonnaise
  • 2 tbsp of your favorite store-bought pesto

Directions:

To make the sauce, combine the mayo and pesto. Set aside.

Slice each baguette into 4 pieces (totaling 8 pieces). Then cut each piece in half lengthwise. Spread each half with the pesto mayo. Then, to assemble sandwiches, place prosciutto on the bottom half of the baguette, followed by tomato, mozzarella and basil. Cover with the top half of the baguette and serve.
