White Chocolate Chip Cookies

As you might know by now, I am a chocoholic! Dark chocolate, milk chocolate or white chocolate, I love them all! These cookies are extra chocolatey because the dough has cocoa powder AND white chocolate chips. I love having freshly baked cookies in the house! I bake them before we have guests over because they make the house smell amazing and everybody loves cookies! (Find my other fav cookie recipes here and here!) Serve these with a tall glass of ice cold milk.

Ingredients:

  • 2 sticks of butter, softened
  • ¾ cup white sugar
  • 2/3 cup brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 ¼ cup all-purpose flour
  • 2/3 cup cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 cups white chocolate chips
  • Optional: melted white chocolate for topping

Directions:

Preheat oven to 350 degrees.

In the bowl of a stand mixer, beat together butter, and both white and brown sugar. Once light and fluffy, put the mixer on low and add 2 eggs, one at a time. Then add the vanilla extract.

Next, add flour, cocoa powder, baking soda and salt and begin mixing slowly (so that flour doesn’t get all over you and your kitchen). Continue mixing until the dry ingredients are fully incorporated. Finally, add chocolate chips and mix again.

Use a cookie scoop (1 1/2 tbsp size) and place cookie dough onto a lined baking sheet. Bake for 8 to 10 minutes. Place on cooling rack to allow to cool. If you want to add a drizzle of white chocolate on top, melt chocolate in a microwave safe bowl for 15 second intervals until fully melted and smooth. Then use a spoon to drizzle cookies with chocolate.
