Butterscotch Apple Crisp

With Christmas around the corner, I’ve been baking like crazy! My Mom is best baker and bakes even more than usual around the holidays. I grew up with her making a new dessert pretty much every day of December. It was the BEST! There is something so sweet and nostalgic about the smell of freshly baked desserts in the house during these colder months. Aside from making cookies, bars and candies, I love to make some dishes that use fresh fruits. Apple desserts are especially comforting at this time of year. This recipe is easy to make and perfect to serve at your next holiday dinner party.
Ingredients:
Filling:
- 5 Granny Smith apples
- 1 11 oz bag butterscotch chips
- 1/4 cup flour
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 lemon, juiced
- 3 tablespoons unsalted butter, cubed
Topping:
- 3/4 cup flour
- 1/4 cup brown sugar
- 1/2 cup quick oats
- 1/2 cup butter, softened
Directions:
Preheat oven to 350 degrees. Butter a 9 x 13 inch baking dish.
Begin by peeling the apples. Then roughly chop them and add them to a large mixing bowl. Then add the butterscotch chips, flour, brown sugar and cinnamon. Squeeze a lemon over the ingredients and mix together. Pour filling into the baking dish. Top the apples with the cubed butter.
In another mixing bowl, add flour, brown sugar, quick oats and butter. Use your hands to incorporate the dry ingredients into the butter. Then sprinkle the topping over the filling in the baking dish. Place in the oven and bake for about 45 minutes until the top is golden and bubbling. Remove from oven. Serve with vanilla ice cream.
