Almond Coconut Green Smoothie
I have a smoothie every morning for breakfast Monday through Friday. I like to experiment and switch it up but it almost always includes spinach, a banana and almond milk. Several years ago while in Hawaii, I had the best green smoothie of my life. I ordered it every day of my trip and would watch the person behind the counter make it so that I could see exactly what was in it. I found that the secret ingredient was coconut milk. That was the key to how creamy and delicious it was. If I’m making this smoothie and don’t have a can of coconut milk on hand, I will swap it out for coconut oil and it’s just as good and super nutritious. This smoothie is the perfect way to start your morning and will keep you full until lunch!
Serves 1
Ingredients:
- 1 cup packed spinach
- 1 banana
- 1 – 2 pitted dates (depending on how sweet you want it)
- 1 heaping tsp almond butter
- 1 heaping tbsp canned coconut milk
- 1 cup almond milk
- ½ – 1 cup of ice
Directions:
Add all ingredients to a blender (I LOVE the Ninja). Blend until smooth.
