I make this soup on repeat this time of year! Pro I make this soup on repeat this time of year! Pro tip: Blend the broth and veggies together until smooth and then add to pastina for the kids! SO delicious and super nutritious 🥕🧅 

Ingredients:
- 1 whole chicken
- 1 yellow onion, chopped
- 5 carrots, chopped
- 5 celery stalks, chopped
- 5 cloves of garlic, minced
- 1 tsp dried oregano 
- 1 tsp dried basil
- 1 tsp dried thyme 
- 2 tsp salt
- 4 cups broth (I use bone broth for extra nutrients)
- 4 cups water 
- 1 lb pastina (optional)

Directions: 
Add all ingredients to a large pot. Bring the pot to a boil. Once boiling reduce to a simmer and let cook for about 2 hours. Then remove the chicken from the pot and allow it to cool slightly before shredding. 

At this point, I will take half the broth and veggies and blend until smooth since by kids don’t always love the large pieces of veggies in the broth. Then I add the blended soup to the cooked pastina in a separate pot. Set that aside. Next I add the shredded chicken to the soup. You can also add some of the pastina to the chicken soup as well!
