I make this soup on repeat this time of year! Pro I make this soup on repeat this time of year! Pro tip: Blend the broth and veggies together until smooth and then add to pastina for the kids! SO delicious and super nutritious ๐Ÿฅ•๐Ÿง… 

Ingredients:
- 1 whole chicken
- 1 yellow onion, chopped
- 5 carrots, chopped
- 5 celery stalks, chopped
- 5 cloves of garlic, minced
- 1 tsp dried oregano 
- 1 tsp dried basil
- 1 tsp dried thyme 
- 2 tsp salt
- 4 cups broth (I use bone broth for extra nutrients)
- 4 cups water 
- 1 lb pastina (optional)

Directions: 
Add all ingredients to a large pot. Bring the pot to a boil. Once boiling reduce to a simmer and let cook for about 2 hours. Then remove the chicken from the pot and allow it to cool slightly before shredding. 

At this point, I will take half the broth and veggies and blend until smooth since by kids donโ€™t always love the large pieces of veggies in the broth. Then I add the blended soup to the cooked pastina in a separate pot. Set that aside. Next I add the shredded chicken to the soup. You can also add some of the pastina to the chicken soup as well!

Sheet pan Greek Chicken is a weekly staple in our Sheet pan Greek Chicken is a weekly staple in our house! Easy, minimal cleanup and my kids LOVE it! 

Ingredients:
2 zucchini, cut in half and then sliced 
1 red bell pepper, chopped 
1 red onion, roughly chopped
1 pint cherry tomatoes 
1.5 lb chicken thighs
4 cloves garlic, minced 
Olive oil
Salt
Dried oregano
1/2 cup Kalamata olives 

Directions:
Preheat the oven to 425. Place zucchini, bell pepper, onion and tomatoes on a lined baking sheet. Then arrange the chicken thighs on top. Drizzle everything with olive oil and then sprinkle with salt, oregano and minced garlic.

Place in the oven for about 35 - 45 minutes, until the chicken temp reads 165 degrees. Once out of the oven top with the Kalamata olives. Serve with tzatziki (homemade or store bought) over rice or mixed greens.
The easiest muffins ๐ŸŒ Ingredients: 2 ripe ban The easiest muffins ๐ŸŒ 

Ingredients:
2 ripe bananas
2 1/4 cup rolled oats
1/2 cup peanut butter
1/2 cup pure maple syrup
1/4 cup almond milk
2 eggs
1 tbsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup Semi-Sweet Chocolate Chunks (or chocolate chips)
 
Directions:
Preheat oven to 375 degrees. Place all ingredients, except for the chocolate chips, into a blender (I use this Vitamix) and blend until completely smooth. Then, reserve a small handful of the chocolate chunks to top the muffins with. Add the rest of the chocolate to the batter and stir. I like to use cupcake liners but you can just spray the muffin tin with nonstick spray if youโ€™d prefer. Then using an ice cream scooper, fill the tin with batter. Top each muffin with the remaining chocolate and then place in the oven for about 20 minutes, until a toothpick inserted comes out clean.
